Peruvian Ceviche Clásico (Peruvian Raw Fish Dish)
A refreshing and flavorful dish from Peru, made with raw fish marinated in citrus juices, mixed with onions, peppers, and aji amarillo peppers.
Ingredients
Proteins
- 1 pound fresh white fish (such as halibut or sea bass), cut into small pieces
Produce
- 2 limes, juiced
- 1/4 cup extra virgin olive oil
- 1 large red onion, thinly sliced
- 2 aji amarillo peppers, seeded and chopped
- 2 tomatoes, diced
- 1/4 cup fresh cilantro leaves, chopped
Miscellaneous
- Salt to taste
- 1 teaspoon Peruvian aji amarillo pepper paste
- 1 tablespoon sugar
Ceviche Sauce (Lemon and Aji Amarillo Paste)
Mix the following:
- 2 tablespoons lemon juice
- 1 tablespoon aji amarillo pepper paste
- 1 tablespoon olive oil
- Salt to taste
Recipe Steps
1. Prepare the Aji Amarillo Pepper Paste
Grind 2 aji amarillo peppers and 1 teaspoon of salt in a blender or food processor until you get a smooth paste.
2. Marinate the Fish
In a large bowl, combine fish pieces, lime juice, olive oil, chopped onion, chopped cilantro, salt to taste, and aji amarillo pepper paste. Mix well and let marinate for at least 30 minutes in the refrigerator.
3. Combine All Ingredients
Add diced tomatoes and the prepared aji amarillo pepper paste mixture to the fish marinade. Stir well and adjust seasoning if needed.
Optional: Variation Name (Spicy Ceviche)
- Add more chopped aji amarillo peppers or hot sauce like sriracha for extra heat
