Korean Japchae (Korean Stir-Fried Glass Noodles)
Korean Japchae is a popular dish made from stir-fried glass noodles, vegetables, and sometimes meat. It’s often served as a side dish or used as an ingredient in other Korean dishes.
Ingredients
Vegetables
- 1 cup zucchini, sliced
- 1 cup carrots, peeled and grated
- 1 cup bean sprouts
Glass Noodles
- 200g glass noodles (dangmyeon)
Meat (optional)
- 100g beef, cut into thin strips
Sauce
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- 2 tablespoons Korean chili flakes (gochugaru)
- 2 tablespoons ** vegetable oil**
- 1 tablespoon Gochujang (Korean chili paste)
Japchae Sauce
Mix the following:
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- 2 tablespoons Korean chili flakes (gochugaru)
- 2 tablespoons ** vegetable oil**
Recipe Steps
1. Prepare Glass Noodles
Soak glass noodles in hot water for about 5 minutes, or according to package instructions. Drain and set aside.
2. Heat Oil and Sauté Vegetables
Heat oil in a large skillet or wok over medium-high heat. Add zucchini, carrots, and bean sprouts. Stir-fry until vegetables are tender-crisp, about 3-4 minutes.
3. Add Meat (if using)
If using beef, add it to the skillet and stir-fry until cooked through, about 2-3 minutes.
4. Add Glass Noodles
Add soaked glass noodles to the skillet and stir-fry for about 2-3 minutes, or until noodles are coated with sauce and heated through.
5. Mix in Japchae Sauce
Pour prepared japchae sauce into the skillet and stir-fry everything together for another minute.
6. Season with Gochujang
Stir in gochujang to give the dish a spicy kick.
Optional: Spicy Japchae Variation
- If desired, add more Korean chili flakes (gochugaru) or gochujang to increase heat level.
- Serve with
