Chicken Satay (Southeast Asian Grilled Chicken Skewers)
Chicken satay is a popular Southeast Asian dish that originated in Indonesia and Malaysia. It consists of marinated chicken breast, grilled on skewers and served with peanut sauce, kecap manis (sweet soy sauce), and steamed rice.
Ingredients
Protein
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 tablespoons soy sauce
- 1 tablespoon kecap manis (sweet soy sauce)
- 2 tablespoons brown sugar
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Aromatics
- 2 stalks lemongrass, bruised
- 1/4 cup kaffir lime leaves
- 1 tablespoon coriander seeds
- 1 scorpion pepper (optional)
Sauce
- 1/2 cup creamy natural peanut butter
- 1/4 cup coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons kecap manis (sweet soy sauce)
- 2 tablespoons brown sugar
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
Garnish
- Sliced cucumber and carrots for garnish
- Steamed rice and peanut sauce for serving
Chicken Satay Sauce (if applicable)
Mix the following:
- 2 tablespoons creamy natural peanut butter
- 1 tablespoon coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons kecap manis (sweet soy sauce)
- 2 tablespoons brown sugar
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
Recipe Steps
1. Prepare the marinade
In a blender or food processor, combine lemongrass, kaffir lime leaves, coriander seeds, and scorpion pepper (if using). Blend until smooth.
2. Marinate the chicken
In a large bowl, whisk together soy sauce, kecap manis, brown sugar, cumin, smoked paprika, salt, and pepper. Add the marinade mixture, garlic, and ginger to the bowl. Stir in the vegetable oil.
