Shish Taouk (Lebanese Chicken Skewers)
Shish Taouk is a popular Lebanese dish made with marinated chicken skewers, typically served with a side of garlic sauce and warm pita bread.
Ingredients
Meat Category
- 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika (optional)
- Salt and black pepper, to taste
Spice Blend Category
- 2 teaspoons sumac
- 1 teaspoon allspice
- 1/2 teaspoon cayenne pepper (optional)
Additional Ingredients
- Fresh parsley or cilantro, chopped (for garnish)
- Garlic sauce (see below for recipe)
- Warm pita bread, served on the side
Shish Taouk Sauce
Mix the following:
- 1 cup yogurt
- 2 cloves garlic, minced
- 1 tablespoon freshly squeezed lemon juice
- 1/4 teaspoon cumin powder
- Salt and black pepper, to taste
Recipe Steps
1. Marinating the Chicken
In a large bowl, whisk together olive oil, garlic, lemon juice, cumin, smoked paprika (if using), salt, and black pepper. Add the chicken pieces and mix until they are well coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.
2. Preparing the Spice Blend
In a small bowl, combine sumac, allspice, and cayenne pepper (if using). Mix well to combine.
3. Skewering the Chicken
Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece. Brush the skewers with some of the reserved marinade.
4. Grilling the Chicken
Grill the skewers for 8-10 minutes per side, or until they are cooked through and slightly charred.
5. Serving
Serve the Shish Taouk hot with a dollop of garlic sauce on top. Garnish with chopped parsley or cilantro and serve with warm pita bread.
