Bhuna Masala (Indian Spicy Mutton Curry)
Bhuna Masala is a popular Indian dish made with mutton cooked in a spicy and flavorful tomato-based curry sauce, often served with basmati rice or naan bread.
Ingredients
Meat
- 500g boneless lamb shoulder or neck, cut into small pieces
Aromatics
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 2 inches ginger, peeled and grated
Spices
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp amchur powder (dried mango powder)
- 1/2 tsp ghee or vegetable oil
Sauce
- 2 cups tomato puree
- 1 cup water
- 2 tbsp tamarind paste
- 2 tbsp brown sugar
- Salt, to taste
Garnish
- Fresh cilantro leaves, for garnish
- Lemon wedges, for serving (optional)
Bhuna Masala Sauce
Mix the following:
- 1/4 cup ghee or vegetable oil
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt, to taste
Recipe Steps
1. Roast the Spices and Aromatics
Heat 1 tbsp ghee or oil in a pan over medium heat. Add cumin seeds, coriander seeds, and cinnamon stick. Let them sizzle for a few seconds. Remove from heat.
2. Sear the Meat
In another pan, heat 1 tbsp ghee or oil over medium-high heat. Add lamb pieces and sear until browned on all sides. Remove from heat and set aside.
3. Soften the Onions
Reduce heat to low and add more ghee or oil if needed. Add chopped onions and sauté until they are lightly browned and soft, stirring occasionally.
4. Blend the Sauce
Using a blender or grinder, blend the roasted spices, aromatics, tamarind paste, tomato puree, water
