Gozleme ([Turkish]
Thin, flaky pastry pockets filled with spiced cheese and herbs, often served as a snack or light meal.
Ingredients
Meat and Cheese
- 1 pound ground beef
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Spices and Herbs
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Pastry Dough
- 2 cups all-purpose flour
- 1/2 cup warm water
- 1 tablespoon olive oil
Gozleme Sauce (optional)
Mix the following:
- 1/2 cup plain yogurt
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon juice
Recipe Steps
1. Make the Pastry Dough
Combine flour, warm water, and olive oil in a large bowl. Mix until dough forms, then knead for 5 minutes.
2. Prepare the Filling
In a separate bowl, combine ground beef, crumbled feta cheese, chopped parsley, paprika, cumin, salt, black pepper, and cayenne pepper. Mix well.
3. Roll Out Pastry Dough
Divide dough into 4 equal pieces. Roll out each piece into a thin sheet, about 1/8 inch thick.
4. Assemble Gozleme
Place a tablespoon of filling in the center of each pastry sheet. Fold the pastry in half to form a triangle or rectangle shape, pressing edges together to seal.
5. Fry Gozleme
Heat about 2 inches of oil in a large skillet over medium-high heat. When oil is hot, add gozleme and fry until golden brown on both sides, about 3-4 minutes per side.
Optional: Spicy Red Pepper Variation
Add 1-2 diced red peppers to the filling mixture for an extra kick of heat.
