Khachapuri (Georgian Bread) ([Georgian/Description])
Traditional Georgian bread filled with melted cheese and egg.
Ingredients
Dough
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1 packet active dry yeast
- 1 cup warm water
Filling
- 8 ounces shredded mozzarella cheese
- 2 large eggs, beaten
Additional ingredients
- 1 tablespoon olive oil
- Fresh dill, chopped (optional)
Khachapuri Sauce (if applicable)
Mix the following:
- 2 tablespoons butter, melted
- 1 tablespoon sour cream
- 1 teaspoon chopped fresh dill
Recipe Steps
1. Activate Yeast
Combine warm water and yeast in a large mixing bowl. Let sit for 5 minutes until frothy.
2. Mix Dough Ingredients
In a separate bowl, whisk together flour, salt, sugar, and olive oil. Add the dry mixture to the yeast mixture and mix until a dough forms.
3. Knead Dough
Knead the dough for 10 minutes until smooth and elastic. Place in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour.
4. Prepare Filling
Preheat oven to 375°F (190°C). In a bowl, combine mozzarella cheese and beaten eggs.
5. Shape Dough
Punch down the dough and divide into 2 equal pieces. Roll out each piece into a long rectangle.
6. Assemble Khachapuri
Place one of the rectangles on a baking sheet lined with parchment paper. Spread half of the cheese mixture over the dough, leaving a 1-inch border around the edges. Repeat with the second rectangle and remaining cheese mixture.
7. Fold and Seal
Fold the edges of the khachapuri to form a crust. Use a knife or a pastry brush to seal the edges.
8. Brush with Egg Wash
Beat an egg in a small bowl and brush the egg wash over the khachapuri to give it a golden brown color.
9. Bake Khachapuri
