Malai Kofta ([Indian/Pakistani Origin])
A rich and creamy Indian-inspired dish featuring marinated lamb or beef meatballs in a fragrant coconut milk sauce, served with fluffy basmati rice.
Ingredients
Meat Filling
- 500g lamb mince (or beef)
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon ginger paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt and pepper to taste
Coconut Milk Sauce
- 250ml full-fat coconut milk
- 150g grated paneer (or substitute with ricotta)
- 2 tablespoons lemon juice
- 1 tablespoon ghee or vegetable oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon coriander seeds
- Salt and pepper to taste
Rice
- 200g basmati rice
- 1 cup of water
- Salt to taste
Malai Kofta Sauce
Mix the following:
- 150ml coconut milk
- 50g grated paneer (or substitute with ricotta)
- 1 tablespoon lemon juice
- 1/2 teaspoon ghee or vegetable oil
- Salt and pepper to taste
Recipe Steps
1. Prepare the Meat Filling
In a large mixing bowl, combine lamb mince, onion, garlic, ginger paste, cumin powder, coriander powder, garam masala, salt, and pepper. Mix well until just combined.
2. Shape the Koftas
Divide the meat filling into small portions (about 1 1/2 inches in diameter) and shape each portion into a ball. Flatten slightly to form a patty.
3. Prepare the Coconut Milk Sauce
In a medium saucepan, heat ghee or oil over medium heat. Add cumin seeds and coriander seeds; let sizzle for 30 seconds. Pour in coconut milk, lemon juice, and grated paneer. Bring mixture to a simmer.
4. Cook the Basmati Rice
Rinse basmati rice in water until the water runs clear. Drain excess water and soak rice in water for at least 30 minutes. Drain and set aside. In
