Khinkali (Georgian Boiled Dumplings) ([Origin/Description])
Khinkali are traditional Georgian boiled dumplings filled with spiced meat and herbs, served as an appetizer or main course.
Ingredients
Meat
- 500g ground beef
- 250g ground pork
Aromatics
- 3 medium onions, finely chopped
- 2 ** cloves garlic**, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon black pepper
Herbs and Spices
- 2 sprigs fresh parsley, chopped
- 1 sprig fresh dill, chopped
- Salt to taste
Dough
- 250g all-purpose flour
- 1/4 salt
- 1/4 sugar
- 1/2 cup warm water
Egg Wash
- 1 egg, beaten (for egg wash)
Khinkali Sauce (Machhuli)
Mix the following:
- 100g sour cream
- 50g diced fresh dill
- Salt to taste
Recipe Steps
1. Make the Dough
In a large mixing bowl, combine flour, salt, and sugar. Gradually add warm water and mix until dough forms.
2. Prepare Filling
In a separate mixing bowl, combine ground beef, ground pork, chopped onions, garlic, cumin, coriander, turmeric powder, black pepper, parsley, and dill. Season with salt to taste.
3. Assemble Dumplings
Divide dough into small balls (about the size of a golf ball). Roll out each ball into a thin circle. Place a tablespoon of filling in the center of each circle. Fold the dough over the filling to form a half-moon shape, and press edges together to seal.
4. Boil Dumplings
In a large pot, bring water to a boil. Carefully add khinkali and cook for 10-15 minutes, or until they float to the surface.
5. Serve with Sauce
Remove dumplings from boiling water with a slotted spoon and serve hot with machhuli sauce, chopped fresh parsley, and lemon
