Jollof Rice with Grilled Sausage and Peppers ([West African])
A classic one-pot dish originating from the West African region, often debated as a national dish of Ghana or Nigeria. This version combines spicy sausages and sweet bell peppers for added flavor.
Ingredients
Proteins
- 1 pound sausages (any variety)
- 1 pound chicken breast or thighs
Grains
- 2 cups long-grain rice
Vegetables
- 4 bell peppers, sliced
- 2 onions, chopped
- 3 garlic cloves, minced
Spices and Seasonings
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fish sauce (optional)
- 1 tablespoon hot sauce (such as sriracha)
Oils
- 3 tablespoons vegetable oil
Jollof Rice Sauce
Mix the following:
- 2 cups chicken or vegetable broth
- 1 cup water
- 2 tablespoons tomato paste
- 1 tablespoon brown sugar
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
Recipe Steps
1. Prepare the Sausages and Peppers
Preheat your grill or grill pan to medium heat. Grill the sausages until browned, then set aside. Grill the bell peppers for about 5 minutes on each side until slightly charred.
2. Cook the Onions and Garlic
In a large pot or Dutch oven, heat 1 tablespoon of oil over medium heat. Add the chopped onions and cook until they are translucent, about 3-4 minutes. Add the minced garlic and cook for another minute, until fragrant.
3. Cook the Rice
Add the remaining 2 tablespoons of oil to the pot with the onions and garlic. Stir in the cumin, paprika, salt, and black pepper. Add the rice and stir to coat the grains evenly with spices. Cook for about 5 minutes or until the rice is lightly toasted.
