Peruvian Lomo Saltado ([Peruvian Stir-Fried Beef])
A classic Peruvian dish that combines stir-fried beef, onions, tomatoes, and French fries, served with steamed rice.
Ingredients
Proteins
- 1 pound sirloin steak, sliced into thin strips
- 2 eggs, beaten (for egg omelette)
Vegetables
- 2 large onions, sliced
- 2 large tomatoes, diced
- 2 cloves garlic, minced
- 1 cup French fries
- 1 cup scallions (green onions), chopped
Sauce
- 1/4 cup soy sauce
- 2 tablespoons Peruvian aji amarillo pepper paste
Additional ingredients
- 2 tablespoons vegetable oil
- Salt and black pepper, to taste
- 2 tablespoons chimichurri sauce (see below)
Chimichurri Sauce
Mix the following:
- 1/4 cup parsley, chopped
- 1/4 cup oregano, chopped
- 2 cloves garlic, minced
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
Recipe Steps
1. Prepare the ingredients
Slice the onions, tomatoes, and scallions. Cut the French fries into bite-sized pieces.
2. Cook the French fries
Heat the vegetable oil in a large skillet over medium-high heat. Add the French fries and cook until crispy, about 5-7 minutes. Drain on paper towels.
3. Stir-fry the beef and onions
In a separate large skillet or wok, heat 1 tablespoon of vegetable oil over high heat. Add the sliced beef and cook until browned, about 2-3 minutes. Remove from heat and set aside.
4. Cook the garlic and tomatoes
In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and sauté for 1 minute. Add the diced tomatoes and cook until they start to soften, about 2-3 minutes.
5. Combine the ingredients
Add the cooked beef back into the skillet with the garlic and tomatoes. Stir in the soy sauce, aji amarillo pepper paste, salt, and black pepper. Cook for an additional 1-
