Jamaican Jerk Chicken ([Traditional Caribbean dish])
A classic Jamaican dish with a bold, aromatic flavor profile.
Ingredients
Marinating Category
- 1/2 cup allspice
- 1/4 cup thyme
- 1/4 cup scotch bonnet peppers, chopped (use gloves when handling)
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons lime juice
Rubbing Category
- 1/2 cup brown sugar
- 2 tablespoons allspice
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
Additional ingredients
- 4 pounds chicken breast or thighs, cut into 8 pieces
- 2 tablespoons vegetable oil
Jerk Chicken Sauce
Mix the following:
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper
Recipe Steps
1. Prepare the Marinade
In a blender or food processor, combine marinating ingredients and blend until smooth.
2. Marinate the Chicken
Place chicken pieces in a large bowl or zip-top plastic bag. Pour marinade over the chicken and massage to coat evenly. Cover and refrigerate for at least 2 hours or overnight.
3. Prepare the Rub
In a small bowl, mix together rubbing ingredients until well combined.
4. Apply the Rub and Oil
Remove chicken from marinade, letting any excess liquid drip off. In a large bowl, combine rub and oil. Add chicken to the bowl and toss to coat evenly.
5. Grill or Roast the Chicken
Preheat grill to medium-high heat or oven to 400°F (200°C). Place chicken on the grill or in a baking dish and cook for 25-30 minutes or until cooked through, basting with pan juices every 10 minutes.
Optional: Curry Jerk Chicken
- To add a curry twist, mix 1/4 cup curry powder into the rub before applying to the chicken.
