Sosatie de Kudu ([South African Description])
Traditional South African meat skewers, typically made with kudu or ostrich, are a hearty and flavorful dish.
Ingredients
Proteins
- 500g kudu steak, cut into 2.5cm cubes
- 250g ostrich liver, sliced
- 1/4 cup white wine vinegar
- 1/4 cup olive oil
Spice Blend
- 2 tablespoons curry powder
- 1 tablespoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin seeds
Aromatics
- 2 cloves garlic, minced
- 1 onion, sliced
Sosatie de Kudu Sauce (if applicable)
Mix the following:
- 2 tablespoons white wine vinegar
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
Recipe Steps
1. Preparing the Spice Blend
Combine curry powder, paprika, salt, black pepper, and cumin seeds in a bowl.
2. Marinating the Kudu Steak
In a large bowl, combine kudu steak, white wine vinegar, olive oil, garlic, onion, and spice blend. Mix well to coat. Cover and refrigerate for at least 4 hours or overnight.
3. Preparing the Ostrich Liver
Slice ostrich liver into thin strips and marinate in separate bowl with remaining marinade ingredients (excluding kudu steak) for 2 hours.
4. Skewering the Meat
Thread alternate pieces of kudu steak, ostrich liver, and onion onto skewers, leaving a small space between each piece.
Optional: Braai-Style Sosatie de Kudu
- Grill sosatie de kudu over medium-high heat for 8-10 minutes per side, or until cooked to desired level of doneness.
