Gado-Gado ([Indonesian Salad])
Gado-Gado is a popular Indonesian salad made from mixed vegetables, tofu, and tempeh, topped with peanut sauce.
Ingredients
Vegetables
- 1 cup cabbage, shredded
- 1 cup carrots, peeled and grated
- 1 cup bean sprouts
- 1 cup long beans, cut into 2-inch pieces
Protein
- 3 oz firm tofu, cut into small cubes
- 3 oz tempeh, crumbled
Peanut Sauce
- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 2 tbsp soy sauce
- 1 tsp grated ginger
- 1 tsp lime juice
Additional
- 2 tbsp fried shallots, chopped
- 2 kaffir lime leaves
Peanut Sauce (if applicable)
Mix the following:
- 2 tbsp peanut butter
- 1 tbsp coconut milk
- 1/4 tsp grated ginger
- 1/4 tsp lime juice
Recipe Steps
1. Prepare Vegetables
Chop all the vegetables into desired sizes and set aside.
2. Cook Tofu and Tempeh
In a small pan, heat 1 tbsp of oil over medium heat. Add tofu and tempeh and cook until golden brown on all sides.
3. Assemble Salad
In a large bowl, combine cooked tofu, tempeh, vegetables, peanut sauce (if using), fried shallots, and kaffir lime leaves.
Optional: Gado-Gado Variation with Sambal
- To add an extra layer of flavor, mix 1/4 cup sambal into the peanut sauce for a spicy kick.
