Khinkali ([Georgian Tradition])
Khinkali are traditional Georgian dumplings filled with spiced meat and served with a side of tkemali, a sour cherry sauce.
Ingredients
Filling
- 500g ground beef
- 250g ground pork
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon coriander
Pastry
- 200g all-purpose flour
- 100g cold unsalted butter, cubed
- 1 egg, lightly beaten
Tkemali Sauce
- 500g sour cherries (or substitute with cranberries)
- 250ml white wine vinegar
- 2 tablespoons granulated sugar
Khinkali Sauce (if applicable)
Mix the following:
- 50g unsalted butter, melted
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Recipe Steps
1. Make the Pastry
Combine flour and cubed butter in a bowl using your fingertips until mixture resembles coarse crumbs. Gradually add beaten egg, mixing with a fork until dough forms.
2. Divide Dough into Small Balls
Divide dough into 20 equal pieces. Roll each piece into a thin circle.
3. Prepare Filling
In a separate bowl, mix together ground meats and spices until well combined.
4. Assemble Khinkali
Place a tablespoon of filling in the center of each dough circle. Fold dough over to form a half-moon shape, then press edges to seal.
Optional: Spicy Variation
Add 1-2 teaspoons red pepper flakes to the filling for an extra kick of heat.
Please note that Khinkali are traditionally steamed and served with tkemali sauce. If you prefer, you can pan-fry the khinkali until golden brown before serving.
