Dukkah (Egyptian Roasted Nut and Spice Mix)
Dukkah is a traditional Egyptian spice mix served as an appetizer or used to add flavor to various dishes.
Ingredients
Nuts and Seeds
- 1/2 cup pumpkin seeds
- 1/4 cup sunflower seeds
Spices
- 3 tablespoons ground coriander
- 2 tablespoons ground cumin
- 2 tablespoons cayenne pepper
- 1 tablespoon ground cinnamon
- 1 tablespoon ground cardamom
- 1 teaspoon ground cloves
- 1/2 teaspoon black pepper
Oils and Acids
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
Additional Ingredients
- 4-5 dates, pitted
- 2 lemons, zested
Dukkah Sauce (optional)
Mix the following:
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- 1 teaspoon honey
- 1/2 teaspoon ground cinnamon
Recipe Steps
1. Roast the Nuts and Seeds
Preheat oven to 350°F (175°C). Spread pumpkin seeds and sunflower seeds on a baking sheet. Drizzle with olive oil, salt, and cayenne pepper. Roast for 10-12 minutes or until fragrant and lightly browned.
2. Grind the Nuts and Seeds
Allow the nuts and seeds to cool slightly. Transfer them to a spice grinder or food processor. Process until coarsely ground.
3. Mix with Spices
In a small bowl, combine ground coriander, cumin, cinnamon, cardamom, cloves, and black pepper.
4. Combine the Dukkah Mixture
Add the spice mixture to the ground nuts and seeds. Stir until well combined.
5. Add Dates and Lemon Zest
Stir in pitted dates and lemon zest.
Optional: Stuffed Dates with Dukkah
- Stuff each date with a small amount of the dukkah mixture.
- Serve as an appetizer or use to add flavor to various dishes.
