Thai Massaman Curry (Thai Stir-Fried Beef in Rich Curry Sauce)

- 2 tablespoons vegetable oil

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
[Sauce]
- 250ml coconut milk
- 100ml beef broth
- 2 tablespoons fish sauce
- 2 tablespoons palm sugar
- 2 tablespoons tamarind paste
- 2 tablespoons chopped peanuts
- 2 kaffir lime leaves
Massaman Curry Sauce
Mix the following:
- 150ml coconut milk
- 50ml beef broth
- 1 tablespoon fish sauce
- 1 tablespoon palm sugar
- 1 tablespoon tamarind paste
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon ground cumin
- 1/4 teaspoon turmeric powder
Recipe Steps
1. Marinating the Beef
In a large bowl, combine beef strips, vegetable oil, garlic, and ginger. Mix well to coat the beef evenly. Cover and refrigerate for at least 30 minutes or overnight.
2. Cooking the Onions and Potatoes
Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add sliced onions and cook until they are lightly browned and caramelized, stirring occasionally (about 8-10 minutes). Add potatoes to the pan and cook for an additional 5 minutes.
