Peruvian Anticuchos (Grilled Beef Heart Skewers)
Peruvian anticuchos are a popular street food made from grilled beef heart skewers, typically served as an appetizer or snack.
Ingredients
Proteins
- 500g beef heart
- 20g vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Marinade
- 250ml red wine vinegar
- 125ml soy sauce
- 50g brown sugar
- 25g chopped fresh cilantro
- 2 tablespoons grated lime zest
Roasted Peppers
- 4 roasted red peppers, peeled and sliced
- 1/4 cup chopped fresh parsley
- 1 tablespoon olive oil
- Salt to taste
Chimichurri Sauce (optional)
Mix the following:
- 250ml fresh parsley leaves and stems
- 125ml fresh oregano leaves
- 100g red onion, finely chopped
- 50g red pepper flakes
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon olive oil
Recipe Steps
1. Prepare the Beef Heart
Cut the beef heart into thin strips and remove any excess fat or connective tissue.
2. Marinate the Beef Heart
In a large bowl, whisk together the marinade ingredients. Add the beef heart strips and mix to coat. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.
3. Grill the Beef Heart Skewers
Preheat a grill or grill pan to medium-high heat. Thread the marinated beef heart onto skewers, leaving a small space between each piece. Brush the grill with vegetable oil to prevent sticking. Grill the anticuchos for 3-4 minutes per side, or until cooked through.
4. Prepare the Chimichurri Sauce (optional)
Combine all chimichurri sauce ingredients in a bowl and mix well. Refrigerate for at least 30 minutes to allow flavors to meld.
5. Assemble the Anticuchos
Once the anticuchos are grilled, brush with roasted peppers and parsley. Serve immediately, garnished with additional roasted peppers if desired.
Optional: Spicy Anticuchos
- To add a spicy kick, sprinkle some red pepper flakes over the beef heart skewers before grilling.
