Feijoada (Brazilian Bean Stew)
Feijoada is a hearty Brazilian stew made from black beans and various meats, typically served on weekends or special occasions.
Ingredients
Meat Category
- 1 pound pork ribs
- 1 pound beef brisket
Vegetable Category
- 2 large onions, chopped
- 3 cloves garlic, minced
- 2 medium potatoes, peeled and cubed
- 1 large carrot, peeled and sliced
- 1 large celery stalk, sliced
Spices Category
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Bean Category
- 1 pound dried black beans, soaked overnight and drained
Additional Ingredients
- 2 tablespoons vegetable oil
- 2 cups beef broth
- 1 cup red wine vinegar
Feijoada Sauce (Malagueta Pepper Sauce)
Mix the following:
- 4 malagueta peppers, seeded and chopped
- 2 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1 tablespoon brown sugar
- 1 teaspoon salt
Recipe Steps
1. Preparing the Meat
Heat oil in a large Dutch oven over medium-high heat. Add pork ribs and cook until browned, about 5 minutes. Remove from pot and set aside.
2. Browning the Beef
Add beef brisket to the pot and brown on all sides, about 5 minutes. Remove from pot and set aside with pork ribs.
3. Soaking the Beans
In a large bowl, combine soaked black beans, water, cumin, oregano, salt, and pepper. Stir to combine.
4. Sauteing the Onions and Garlic
Heat oil in a large skillet over medium heat. Add onions and garlic; cook until softened, about 5 minutes.
5. Adding the Potatoes and Carrots
Add potatoes and carrots to the skillet with onion mixture. Cook for an additional 2-3 minutes.
6. Assembling the Stew
Add browned pork ribs and beef brisket back into the pot. Add sautéed onions, garlic, potatoes, and carrots; stir to combine.
